Saffron Rice Recipe

Ingredients:

  • 1 cup basmati rice (or any long-grain rice)

  • 1 3/4 cups water

  • Pinch of saffron threads (about 1/4 teaspoon)

  • 1 tablespoon warm milk

  • 2 tablespoons ghee (clarified butter) or olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cinnamon stick (about 2 inches)

  • 2-3 green cardamom pods, lightly crushed

  • Salt, to taste

  • Optional: 1/4 cup chopped almonds or cashews

  • Fresh cilantro or parsley, chopped, for garnish

Instructions:

  1. Prepare the Saffron:

    • In a small bowl, combine the saffron threads with warm milk. Let it sit for about 10-15 minutes to allow the saffron to steep and release its color and flavor.

  2. Rinse and Soak the Rice:

    • Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 15-20 minutes. Drain well before cooking.

  3. Cook the Rice:

    • In a medium saucepan, heat the ghee or olive oil over medium heat. Add the chopped onions and sauté until translucent, about 3-4 minutes.

    • Add the minced garlic, cinnamon stick, and crushed cardamom pods. Sauté for another 1-2 minutes until fragrant.

  4. Add Saffron and Rice:

    • Stir in the drained rice and sauté for 1-2 minutes, stirring gently to coat the rice with the onions and spices.

    • Pour in the water and add the saffron-infused milk mixture. Season with salt to taste. Bring to a boil.

  5. Simmer:

    • Once boiling, reduce the heat to low. Cover the saucepan with a tight-fitting lid and simmer for 15-20 minutes, or until the rice is tender and all the liquid is absorbed. Avoid stirring the rice during cooking to prevent it from becoming sticky.

  6. Fluff and Garnish:

    • Remove the saucepan from heat and let it sit, covered, for 5 minutes. Remove the lid and gently fluff the rice with a fork to separate the grains.

    • If using, sprinkle chopped almonds or cashews over the rice. Garnish with fresh cilantro or parsley.

  7. Serve:

    • Transfer the saffron rice to a serving dish and serve hot as a delicious side dish or as a base for your favorite curry or grilled meats.

Tips:

  • Adjust the amount of saffron according to your preference for color and flavor intensity.

  • You can substitute water with vegetable or chicken broth for added flavor.

  • For a richer taste, add a tablespoon of raisins or dried cranberries along with the rice.
