Saffron Rice Recipe
Ingredients:
1 cup basmati rice (or any long-grain rice)
1 3/4 cups water
Pinch of saffron threads (about 1/4 teaspoon)
1 tablespoon warm milk
2 tablespoons ghee (clarified butter) or olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 cinnamon stick (about 2 inches)
2-3 green cardamom pods, lightly crushed
Salt, to taste
Optional: 1/4 cup chopped almonds or cashews
Fresh cilantro or parsley, chopped, for garnish
Instructions:
Prepare the Saffron:
In a small bowl, combine the saffron threads with warm milk. Let it sit for about 10-15 minutes to allow the saffron to steep and release its color and flavor.
Rinse and Soak the Rice:
Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 15-20 minutes. Drain well before cooking.
Cook the Rice:
In a medium saucepan, heat the ghee or olive oil over medium heat. Add the chopped onions and sauté until translucent, about 3-4 minutes.
Add the minced garlic, cinnamon stick, and crushed cardamom pods. Sauté for another 1-2 minutes until fragrant.
Add Saffron and Rice:
Stir in the drained rice and sauté for 1-2 minutes, stirring gently to coat the rice with the onions and spices.
Pour in the water and add the saffron-infused milk mixture. Season with salt to taste. Bring to a boil.
Simmer:
Once boiling, reduce the heat to low. Cover the saucepan with a tight-fitting lid and simmer for 15-20 minutes, or until the rice is tender and all the liquid is absorbed. Avoid stirring the rice during cooking to prevent it from becoming sticky.
Fluff and Garnish:
Remove the saucepan from heat and let it sit, covered, for 5 minutes. Remove the lid and gently fluff the rice with a fork to separate the grains.
If using, sprinkle chopped almonds or cashews over the rice. Garnish with fresh cilantro or parsley.
Serve:
Transfer the saffron rice to a serving dish and serve hot as a delicious side dish or as a base for your favorite curry or grilled meats.
Tips:
Adjust the amount of saffron according to your preference for color and flavor intensity.
You can substitute water with vegetable or chicken broth for added flavor.
For a richer taste, add a tablespoon of raisins or dried cranberries along with the rice.
